Counts of viable airborne microorganisms showed that there were more in plastic greenhouses than in open culure of tomatoes. Altemaria, Aspergillus niger, Asp. oryzae, Cladosporium, Fusarium, Mucor, Penicillium, Trichoderma, Trichothecium, Bacillus, Erwinia and Pseudomonas were among the species isolated that caused tomatoes to deteriorate. Trucking of tomatoes for about 2 days from Takamatsu to Kyoto caused deterioration (visible wounds) in about 10% of the experimental fruits. In these contaminative and latent molds, the results of the bacterial inoculation test obtained more higher deterioration rates by the molds than the bacteria as inocula on the fruits. The Beiju cultivar resisted infection better than Toko-K, Shuko, Kyoryoku-Beiju cultivars in inoculation tests of wounded tomatoes. Fruits treated just before harvest by being sprayed with DL-ethionine, Vitagen As-2, riboflavin, nicotinic acid, or potassium sorbinate inhibited deterioration. These compounds also inhibited the spore-germination of Asp. niger.[著者抄録]1)外観健全なトマト果実の表面汚染菌と潜在菌は輸送,貯蔵中の劣化と密接な関係にある.そして,潜在・汚染菌の数および劣化活性に関与する劣化要因として(1)栽培法(2)果実の熱度,きず,接触状態,品種,(3)流通時の温度などがある. 2)ハウストマトの生菌数は露地トマトに比べいくらか多い.これは空中落下菌数と関連があるものと考えられる.3)トマト果実に劣化を示した菌種はAlternaria, Aspergillus niger, Asp. oryzae, Cladosporium, Fusarium, Mucor, Penicillium, Trichoderma, Trichothecium roseum,などのカビ及びBacillus, Erwinia, Pseudomonasなどの細菌であった.4)細菌を有傷接種したトマトにカビが発生し,劣化する場合が多い.これはトマトではpHなどの関係で細菌よりもカビが生育しやすい環境にあり,劣化活性も比較的強いためであろう
