本稿では，北アジアの乳加工技術と乳製品を，モンゴル遊牧民の事例で紹介してみたい。著者は1999年からモンゴル国を毎年訪れ，モンゴル遊牧民と生活を共に楽しみ，そして，乳加工体系について調査してきた（写真1）。モンゴルは，モンゴルを後にする時，遊牧民の温かさ，笑顔，人情とが心に込み上げ，またモンゴルを訪ねたいときっと思わされる国だ。
モンゴル遊牧民は器具をほとんど使わずに，草原の中で家畜から乳を搾り取る。また，乳加工は，日常の調理用器具を転用しておこなっている。このような搾乳・乳加工に特化した器具をほとんど持たないモンゴル遊牧民は，草原の中でいったいどのように搾乳し，どのような乳加工技術を利用しているのであろうか。興味がわくところである。モンゴル遊牧民の乳加工の特徴は，アジア大陸北方域の人びとに広く採用されている技術を用いている。つまり，クリームをせっせと取り集め，チーズをつくるための凝固剤として酸乳そのものを用い，馬の乳で酒をつくっていることにある（平田，2008；2010）。モンゴルの乳加工体系が地域毎に多様に発達しているのは，これらの諸技術を自由に取捨選択して組み合わせているためで，実はその基本的な乳加工技術は多くの地域で共通している。本稿では，以下にモンゴル国中央部の事例をもとに，モンゴル式の搾乳の技法を先ず紹介してから，乳加工技術と乳製品とを紹介していきたい。
